Apple-Cinnamon Chicken Sausage Patties

Homemade breakfast sausage, made from real ground chicken and a handful of warm spices, with shredded apple folded in for a little natural sweetness. You make the patties yourself, so there is no sugar, no nightshade, and nothing you cannot name. A savory, satisfying start to the day is one of the good pleasures of eating this way.
Chicken is a lean, dependable protein that keeps you steady through the morning, and cooking your own sausage means the seasoning is whole food: cinnamon, ginger, thyme, and rosemary, each bringing its own aromatic compounds. The shredded green apple adds gentle fiber and a whisper of sweetness that needs no added sugar, and the coconut oil gives a clean fat to cook in.
Make a double batch and freeze the extra, so a warm, protein-rich breakfast is always within reach. Cook the patties until the edges catch and brown, and eat them slowly.
Ingredients
- 2 tablespoons coconut oil
- 1 pound ground chicken
- 1 green apple, shredded
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground ginger
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon sea salt
- 1/4 teaspoon garlic powder
Black pepper is omitted for AIP.
Method
- Put everything except the coconut oil in a bowl and mix it together by hand until evenly combined. Shape into 4 patties.
- Heat the coconut oil in a skillet over medium. Cook the patties about 20 minutes, flipping once, until they are cooked through and golden on both sides.
Air fryer variation
Shape the patties and air-fry at 375F, flipping halfway, until cooked through, roughly 12 to 14 minutes. A light brush of coconut oil helps them brown. (verify - untested conversion)
