Why this meal is the one that breaks
Every other meal has an obvious substitute. Breakfast doesn't, because in most kitchens breakfast means eggs, toast, yogurt, or cereal, and on Core Autoimmune Protocol all 4 of those leave at once. The gap that opens is not small, and it opens at the hour when you have the least capacity to solve it.
Morning is the lowest-decision hour of the day. You aren't going to reason your way into a good breakfast at 7am while you're looking for your keys. Eating well in the morning is not a discipline trait. It is a decision made once, on a calmer day, and then not made again.

The savory plate is the most reliable one: a protein, a vegetable, a fat. Salmon and greens. Chicken sausage you've checked the label on, and roasted squash. It looks like lunch, and that's the point. Dinner for breakfast is not a compromise. It is the oldest solution there is, and most of the world already eats this way.
The make-ahead is the one that saves the week: patties, a hash, a tray of roasted vegetables, cooked once and reheated across 3 mornings. Set the morning up the night before
The single change that moves this most, for most women, isn't a recipe. It's deciding at 8pm instead of 7am. Either something is already cooked and waiting, or breakfast becomes whatever is nearest. That is true for nearly everyone, and it is not a personal failing.
Watch what holds and what doesn't. Patties, hashes, and roasted root vegetables reheat well. Anything with avocado or fresh herbs is better put together that morning. Learning your own version of that list is part of the work, and it is the kind of knowledge nobody can build for you.

Not during the elimination phase. Egg whites in particular are one of the most common triggers on this protocol, which is why eggs come out at the start. Yolks and whites separate again on the way back in: yolks are among the earliest foods most people test, and whites come considerably later. So this is very often a season rather than a permanent goodbye, and your own reintroduction will tell you which it is for you.
What do I eat for breakfast if I don't want meat in the morning?
Start with a coconut-based smoothie, stewed fruit with coconut yogurt, or a vegetable soup left from the night before. Warm and savory tends to sit better than cold and sweet, particularly while digestion is still settling. There is no rule that breakfast has to be its own category of food.
Is coffee allowed on AIP?
