Sugar-free vanilla-cinnamon toasted coconut flakes

When the granola, the cereal, and the crunchy toppings all come off the table during elimination, the texture is often what you miss most. This little recipe gives it back. Toasted coconut flakes are crisp, warm, and faintly sweet on their own, and they scatter over a smoothie bowl or a spoon of coconut yogurt the way granola used to.

Coconut is a source of medium-chain fats, the kind the body tends to use readily for energy. Cinnamon and alcohol-free vanilla do the rest of the work, giving warmth and sweetness with no added sugar at all. It is one of the rare AIP treats that is genuinely inexpensive, especially if you buy your coconut flakes from a bulk bin.

The whole thing takes about ten minutes, and most of that is standing at the stove paying attention, because coconut turns from golden to burnt in a breath. There is a small meditation in it, actually. You stand, you stir, you watch the color shift, and you catch it at exactly the right moment. Make a batch on a quiet morning and you will have crunch on hand all week.

Ingredients

  • 2 tbsp coconut oil
  • 3 cups unsweetened coconut flakes or shredded coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp alcohol-free vanilla powder

Method

Melt the coconut oil in a large skillet over medium heat.

Add the coconut flakes, cinnamon, and vanilla powder, and toss until every flake is coated.

Toast for 8 to 10 minutes, stirring often, until the coconut turns golden. Stay close, because it scorches quickly once it starts to color.

Spread the flakes on a plate to cool completely so they crisp up, then store them in an airtight container for up to 2 weeks.

A sweeter version

As written this is sugar-free. If you want it sweeter, drizzle in a little honey or maple syrup along with the spices before toasting, and watch the pan even more closely, since the added sugar will brown and burn faster than the coconut alone.
