A Warm Cup for the End of the Day

Warm spiced coconut milk is the kind of small evening ritual that tells your nervous system the day is winding down. Dairy-free and gently sweet, it holds the same comforting role a warm cup always has, poured slow and sipped while the kitchen quiets.
Cinnamon brings a warming note and is a source of manganese, involved in the body's everyday metabolism and tissue repair, and the coconut milk carries steadying fats that make the drink feel like real comfort rather than just warm liquid. The honey here is just 2 tablespoons across 2 full cups, so the sweetness stays light.
Make it slowly and let the steam rise while you wait. I think of this less as a recipe and more as a pause you give yourself at the end of a long day, one small ritual your nervous system learns to recognize.
Ingredients
- 2 cups coconut milk
- 2 tablespoons honey
- 2 tablespoons coconut butter (optional)
- 3/4 teaspoon alcohol-free vanilla (or 1/4 teaspoon vanilla powder)
- 1/2 teaspoon ground cinnamon (optional)
Swaps made: standard vanilla extract is alcohol-based and excluded on elimination, so alcohol-free vanilla or vanilla powder is used here instead (verify the label).
Method
- Add the coconut milk, honey, coconut butter if using, vanilla, and cinnamon to a small saucepan.
- Warm over medium heat, stirring, until everything is melted together and the milk comes to a gentle simmer.
- Pour into mugs and serve hot. It can also be chilled and served cold.
