Green breakfast smoothie bowl: spinach, mango, and strawberry, coconut-free

Most AIP smoothie bowls lean hard on coconut for body. This one does not need it. Spinach, mango, and strawberry blend into something bright and thick on their own, with avocado doing the work coconut cream usually would.

This bowl is a genuine vitamin C outlier. Between the strawberries, the citrus juice, and the mango, one serving carries most of a day's worth. Fresh spinach is what gives it that vivid green color, not a powder or a supplement, and mango is confirmed AIP-compliant on elimination phase, fresh or freeze-dried.

Ingredients

  • 2 cups packed fresh spinach
  • 1/4 avocado, diced
  • 1 mango, diced
  • 1/2 cup fresh strawberries (about 3 large)
  • Juice of 1 lemon (about 3 tablespoons)
  • Juice of 1 orange (about 1/3 cup)
  • 1 tablespoon collagen peptides
  • Fresh fruit and toasted coconut flakes, to garnish (optional)

Method

  • Combine the spinach, avocado, mango, strawberries, lemon juice, orange juice, and collagen in a high-speed blender.
  • Blend on high for 20 to 30 seconds, until completely smooth.
  • Pour into a bowl and garnish with fresh fruit and coconut flakes if using. Serve immediately, chilled.
