A whole salad in a glass

Some days a full plate of vegetables is more chewing than you have in you. This is what to make instead: 2 cups of lettuce, a cup of spinach, half an avocado, and a handful of cucumber and apple, all run through the blender until a whole serving of vegetables becomes 1 glass you can drink in a few swallows. It takes 5 minutes and there is nothing to cook.

The avocado and olive oil are earning their place beyond flavor. Fat is what your body needs to actually absorb the vitamin A hiding in all that green, so a glass without it would waste most of what the greens are offering. The greens themselves are a source of fiber, which keeps digestion moving on a day when you might not be eating much else.

Drink it cold, straight through, no plate required. Some days caring for yourself is a beautiful arrangement on a plate. Other days it is a cold glass, finished in a few minutes, and it still counts.

Ingredients

  • 1 cup cold water
  • 2 cups chopped lettuce
  • 1 cup chopped spinach
  • 1/2 avocado
  • 1/2 cup cucumber
  • 1/2 cup green apple
  • 1 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar

Method

Put everything in the blender and blend until smooth. It comes out best with chilled ingredients; add ice if you want it colder.
