5 minutes, 1 blender, a pudding that earns its place

On the days you are tired of cooking and still want something that feels like care, this is the answer. No oven, no stove, just a blender and a few whole ingredients that turn into a thick, chocolate dark pudding in the time it takes to rinse the blade. Avocado gives it the silk, raspberries give it the bright edge, carob gives it the cocoa note that fits inside your elimination eating.

Avocado brings monounsaturated fat and potassium, involved in steady energy and helping your body absorb the fat-soluble nutrients on the rest of your plate. Raspberries add a little vitamin C. This is a dessert that works with the healing you are doing, which on a hard day is its own quiet gift.

Spoon it into small dishes, cover them, and let them chill. When you sit down to eat, let it be a real pause, a cool spoonful, a breath, gratitude for food this simple and this whole. The blend also freezes well enough to churn into ice cream if you want to stretch the moment.

Ingredients

  • 2 avocados
  • 1 cup frozen raspberries
  • 1 tablespoon honey
  • 1/4 cup carob powder
  • 1 tablespoon water
  • 1 teaspoon lemon juice (omit for low-histamine or IC sensitivity)
  • 1/4 teaspoon vanilla powder

Swaps made: none. The lemon juice is left in for brightness and flavor, with a note to omit it if you are managing histamine or interstitial cystitis, following the source.

Method

  • Add the avocados, frozen raspberries, honey, carob powder, water, lemon juice if using, and vanilla powder to a blender or food processor.
  • Blend until completely smooth and glossy, scraping down the sides as needed.
  • Spoon the pudding into 4 dishes.
  • Cover them airtight and chill before serving so the flavor settles and the texture firms.

Instant Pot variation

This is a no-cook pudding. There is no Instant Pot or air fryer step. For an ice cream variation, freeze the finished blend and churn it.
