Oven-Baked Pumpkin Spice Pancakes (AIP)

There is a particular relief in a kitchen that smells like cinnamon on a Saturday morning again. AIP takes a lot of ordinary things away for a while, and a stack of pancakes is one of the ones people miss without expecting to. This version bakes on 1 sheet pan in the oven, so there is no standing over a skillet flipping 4 pancakes at a time while everyone else is already eating.
Gelatin earns its place here beyond texture. Cooking it down releases glycine, and glycine gives the gut wall something concrete to rebuild with, work that matters more on a healing protocol than the plain word 'gelatin' suggests. Potassium can be one of the first minerals to run low when someone has been eating a narrow list of foods for months, and the dates in this batter are a real source of it, plus a little fiber.
Serve it with a spoon of coconut cream and let the kitchen smell like it used to on an ordinary Saturday. That smell is doing something too.
Ingredients
- 2 tablespoons gelatin
- 1/2 cup hot water
- 4 medjool dates, pits removed
- 1/2 cup pumpkin puree
- 2 tablespoons coconut oil, melted
- 1 teaspoon apple cider vinegar
- 2/3 cup sweet potato flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Note on spices: This recipe uses cinnamon as the only warming spice, making it fully AIP elimination-compliant. Conventional pumpkin spice blends often include nutmeg, allspice, and cardamom, all of which are seed-spices excluded on AIP elimination. Cinnamon and the pumpkin itself carry the flavor beautifully on their own.
Method
Bloom the gelatin: Preheat your oven to 350 F and line a baking sheet with parchment paper. Measure the hot water into a blender and sprinkle the gelatin over the surface. Let it sit for 1 to 2 minutes to bloom and begin to gel.
Build the batter: Add the pitted medjool dates, pumpkin puree, melted coconut oil, and apple cider vinegar to the blender with the bloomed gelatin. Blend until completely smooth. The dates should be fully pureed and the mixture will be thick. Add the sweet potato flour, baking soda, salt, and cinnamon and blend again until a smooth, uniform batter forms.
Portion and bake: Spoon or pour the batter onto the prepared baking sheet in rounds, spreading each one gently to your preferred pancake size and thickness. The batter will not spread much on its own. Bake for 15 to 20 minutes, until the centers are set and the edges are lightly golden.
Serve: Allow the pancakes to cool for a few minutes before serving. These have a denser, more substantial texture than conventional pancakes. Serve with a spoonful of coconut cream, fresh fruit, or a light drizzle of honey.
