Cauliflower 'oatmeal': the grain-free bowl for mornings oats used to own

Oats are off the table on a grain-free healing diet, and for some people they are a trigger even outside of that, a food that reads as gentle but is not. This bowl rebuilds the format from riced cauliflower and shredded coconut instead, simmered low and slow until it thickens into something with real oatmeal texture.
Cauliflower carries vitamin C that oats never did, and the coconut fat here is not incidental. It is what gives this bowl the same satisfying richness a bowl of oatmeal built its reputation on. Stirring in collagen at the end adds a protein boost without changing the texture, which matters if breakfast protein has been hard to hit.
Ingredients
- 1 1/2 cups riced cauliflower
- 1/2 cup shredded coconut flakes
- 1/2 cup apple, finely diced, plus extra for topping
- 1 cup canned coconut milk
- 1 tablespoon coconut oil
- 1 teaspoon cinnamon
- 4 tablespoons collagen peptides
There is no coconut-free version of this one. The coconut is load-bearing, both for fat and for the texture that reads as "oatmeal" in the first place.
Method
- Melt the coconut oil in a pot over medium-low heat.
- Add the riced cauliflower, coconut flakes, apple, coconut milk, and cinnamon. Stir to combine.
- Simmer 10 to 12 minutes, stirring occasionally, until the cauliflower has softened and the mixture has thickened to a porridge consistency.
- Remove from heat and stir in the collagen peptides until fully dissolved.
- Top with extra diced apple and a dusting of cinnamon. Serve warm.
