Apple lassi: a 3-ingredient drink for the in-between hours

Some days call for a small ritual more than a recipe. This drink asks almost nothing of you, just 3 ingredients stirred together in 5 minutes, and it gives back something cooling and a little sweet.
Coconut yogurt brings live cultures that support the gut microbiome, and cinnamon is a source of compounds studied for their role in blood sugar regulation. Apple butter folds in gentle fruit sweetness with nothing refined added on top.
Pour it into a real glass. Watch the apple butter swirl down through the white. Let the first sip be slow.
Ingredients
- 2 cups coconut yogurt
- 6 tablespoons apple butter
- 1 teaspoon ground cinnamon
Method
Stir the cinnamon all the way through the coconut yogurt until the color is even, then divide it between two glasses.
Spoon the apple butter into each glass and swirl it gently so it ribbons through the yogurt rather than sinking in a single clump. Serve right away.
This is a template more than a fixed recipe. Any fruit puree plus a complementary seasoning will work, so once you have it down you can shift it with the seasons.
