Homemade breakfast sausage patties

A homemade sausage patty is easier to make than it sounds, and having a reliable one in rotation gives your mornings a real anchor. Mix seasoning into ground pork, shape 4 patties, cook them. 10 minutes of effort and breakfast is handled, built entirely from ingredients you can name.

Pork is a source of B vitamins and zinc, a mineral involved in immune regulation and in the gut-barrier repair that supports a calmer immune system. The flavor here comes from sage, rosemary, thyme, ginger, and a little cinnamon, real herbs doing real work, warm and satisfying on their own.

Choose pork from an animal raised well, and let yourself feel the gratitude in cooking from real ingredients. A warm breakfast, eaten slowly, in a settled body, is a good way to begin any morning.

Ingredients

  • 1 lb ground pork
  • 1 tbsp coconut oil (for the pan)
  • 2 tsp ground sage
  • 1 1/2 tsp ground ginger
  • 1 tsp sea salt
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 3/4 tsp garlic powder
  • 1/4 tsp cinnamon

Method

In a bowl, work the sage, ginger, salt, rosemary, thyme, garlic powder, and cinnamon evenly into the ground pork. Divide and shape into four patties.

Heat the coconut oil in a skillet over medium. Cook the patties about 5 minutes per side, until browned and cooked through.

To bake instead, set the oven to 400 F and cook the patties for about 25 minutes, until cooked through.

For a swap, ground lamb or any ground meat works in place of the pork.

Air fryer variation

These patties crisp nicely in the air fryer. Arrange them in a single layer in the basket and cook at about 375 F for roughly 10 to 12 minutes, flipping halfway, until cooked through. Skip the pan oil. The time and temperature are a sensible starting range and not yet kitchen-tested, so check for doneness in the center.
