Orange-Glazed Pork Tenderloin

There are evenings in this work when you want the plate to feel like more than fuel, like an occasion, even a quiet one. This main delivers that with very little hands-on effort. The tenderloin marinates overnight while you sleep, and the next day the oven does the rest. Most of the time here is unattended, so the dish feels generous without asking much of you.

Pork is a source of protein and zinc, and zinc is involved in immune regulation and gut-barrier repair, both central to settling Autoimmunity. The glaze leans on coconut aminos in place of soy, with a modest touch of honey and orange marmalade for brightness, so the flavor is rich while the sugar stays light.

Choose pork raised well, and let the care show at the table. A slice of tenderloin fanned out, a scatter of green onion, a little color beside it. Take a breath before you eat and notice what is in front of you. Beauty on the plate changes how a meal lands in the body, and the few minutes of presence are part of the medicine.

Ingredients

  • 1 pound pork tenderloin
  • 1/6 cup coconut aminos
  • 1/6 cup honey
  • 1/6 cup orange marmalade (check the label, or substitute 1 tablespoon each orange zest, orange juice, and honey)
  • 2 teaspoons apple cider vinegar
  • 2 green onion stalks, sliced, to garnish

The coconut aminos already replaces soy sauce. The source uses white wine vinegar, which AIP avoids as a wine-based product, so apple cider vinegar stands in (verify taste). If your marmalade is not AIP-compliant, use the zest, juice, and honey substitute noted above.

Method

  • Place the tenderloin in a lidded, oven-safe dish. Stir together the coconut aminos, honey, marmalade (or its substitute), and apple cider vinegar, and pour over the pork, turning to coat. Cover and marinate overnight in the refrigerator.
  • Heat the oven to 350F.
  • Bake the tenderloin uncovered for about 1 hour, turning once partway through, until the internal temperature reaches 145F.
  • Rest the pork a few minutes, then slice and garnish with the green onion.
