Coconut-ginger whitefish under the broiler, 10 minutes of heat and you are done

This dish is proof that real flavor on the Autoimmune Protocol comes from warmth and aromatics, not chili heat. Ginger, garlic, onion, a little coconut, and a touch of apple cider vinegar build into a paste that coats the fish and turns golden under the broiler in minutes.

Whitefish is gentle on the system and a source of iodine and lean protein, both linked to healthy thyroid function and the steady tissue repair your body is doing right now. It cooks fast, which matters on the days when standing at the stove for long feels like too much.

Honor the fish by not overcooking it. The moment it flakes at the touch of a fork, it is ready, and another minute only dries it out. Set the table while it broils, lay out the lemon slices, and let the smell of ginger and coconut fill the kitchen.

Ingredients

  • 1 lb whitefish (cod, hake, halibut, or tilapia all work; cod is the source author's pick)
  • 2 tbsp coconut milk
  • 1 tbsp coconut oil
  • 1/2 tsp apple cider vinegar
  • 1/2 tbsp ground ginger
  • 1 tsp sea salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1 lemon, sliced, for serving

Every seasoning here is AIP-compliant as written, so nothing needs swapping. If you want a milder dish, halve the ginger, onion, and garlic.

Method

Heat the broiler and lightly oil a baking sheet.

In a small bowl, stir together everything except the fish and the lemon: the coconut milk, coconut oil, apple cider vinegar, ground ginger, salt, onion powder, garlic powder, and thyme. You want a loose, spreadable paste.

Coat both sides of the fish with the paste and lay the fillets on the oiled sheet.

Broil for 7 to 9 minutes, until the fish is opaque and flakes easily with a fork. Watch it closely, since broilers run hot and thin fillets cook fast.

Serve right away with the lemon slices to squeeze over the top.
