Moroccan lamb burgers, wrapped in lettuce and ready in 15 minutes

When dinner needs to be fast and still feel like a real meal, this is the one. Ground lamb, fresh herbs, and warm spice come together into 4 patties in the pan, with lettuce leaves standing in for buns. 15 minutes from counter to plate, no binder, no fuss, and all the warmth of a Moroccan kitchen inside what your body can currently eat.

The plate is genuinely nourishing. Lamb is a strong source of zinc, involved in immune regulation and gut barrier repair, and it carries vitamin B12 for energy and nerve health. Cinnamon, clove, and ginger stand in for the traditional spice blend and bring warming aromatic compounds long valued in traditional cooking, making the lamb taste like far more than the few minutes it took.

Source the lamb from an animal raised well, and take a moment of gratitude before you eat. Top with avocado, onion, or olives, and let the colors make the plate beautiful. A quick meal can still be a cared for one.

Ingredients

  • 1 pound ground lamb
  • 1 tablespoon chopped cilantro
  • 1 tablespoon chopped parsley
  • 1 clove garlic
  • 1.25 teaspoons ground ginger
  • 1/4 teaspoon cinnamon
  • Pinch of ground clove
  • Pinch of ground mace
  • 1/4 teaspoon turmeric
  • Pinch of sea salt
  • 4 large lettuce leaves, as buns
  • Suggested toppings: avocado, onion, olives

Swaps made: The source lists ginger and cinnamon and is already AIP, and to lean further into the Moroccan warmth without the seed-spices a typical blend uses (cumin, coriander, paprika are all excluded on AIP), this version adds AIP-permitted clove, mace, and turmeric.

Method

  • Mix the cilantro, parsley, garlic, ginger, cinnamon, clove, mace, turmeric, and salt into the ground lamb.
  • Form four patties and pan-fry over medium heat about 4 minutes per side, until cooked through.
  • Serve each patty in a lettuce leaf with your chosen toppings.

Air fryer variation

Form the seasoned lamb into four patties and air fry at 375 degrees about 8 to 10 minutes, turning once at the halfway point, until cooked through. Serve in lettuce leaves with toppings. (verify - untested conversion)
