A pickle-brined fried chicken sandwich rebuilt for healing, wrapped in lettuce

This is the tangy fried chicken sandwich, rebuilt so it is entirely yours again. The chicken sits overnight in an apple cider vinegar brine, the way the well known version leans on pickle juice, so every bite carries that same bright tang. A light tapioca coating crisps in coconut oil, then the whole thing goes into a cool lettuce leaf instead of a bun.
The plan rewards a little patience and gives real food in return. Chicken is a clean protein and a source of selenium, involved in thyroid function and antioxidant defense, both of which matter while your body works to calm inflammation. The vinegar brine does double duty, flavoring the meat and keeping it tender. This is comfort food that meets you exactly where you are.
There is something satisfying about making the thing yourself, with your hands, in a way that loves your body back.
Ingredients
Chicken brine:
- 1 lb chicken breasts
- 1 cup water
- 1 cup apple cider vinegar
- 1/8 cup sea salt
- 1 garlic clove
- 1 tsp dried dill
Breading:
- 3/4 cup tapioca flour
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- coconut oil for frying
To serve:
- 8 green lettuce leaves
- 1/4 cup thin-sliced dill pickles
Swaps made: Omitted the 1 tsp black pepper from the brine, since pepper is excluded on the elimination phase. Left out the mayonnaise to keep this egg-free; use the egg-free mayonnaise if you want a spread.
Method
Combine the water, apple cider vinegar, sea salt, garlic, and dill in a covered dish, add the chicken, and refrigerate for 24 hours. When you are ready to cook, mix the tapioca flour with the salt and garlic powder in a bag, drop in the brined chicken, and shake to coat. Heat about an inch of coconut oil in a skillet over medium-high and shallow-fry for 10 to 15 minutes, turning once, until the chicken reaches 165 F internal. Drain, then tuck each piece into a lettuce leaf with sliced pickles. For fewer dishes, skip the breading and grill the brined chicken instead.
Air fryer variation
After brining and coating, mist the chicken with a little oil and air-fry at 380 F for about 15 to 18 minutes, turning once, until crisp and cooked to 165 F internal. You lose the deep-fry texture and gain a much lighter cleanup.
