Somewhere around your 3rd trip down the specialty aisle, you've probably done the math on what strict AIP baking actually costs. The flours add up fast, and on a protocol that already asks so much of your time, watching the grocery total climb on top of it wears on you. This is the fix that costs almost nothing: 1 pound of plantain, yam, or sweet potato, a low oven, and a blender.
What you end up with is real food ground fine, nothing else added. Plantain, yam, and sweet potato are a source of potassium, which your body uses to keep fluid balance and heart rhythm steady through the day. This is a pantry staple you made with your own hands, nothing more claimed than that. Plantain in particular is the gentler pick if FODMAPs are part of what you're managing right now.
There is something steadying about building your own staple from a single root. You slice it thin, you wait it out, and a jar of pale flour appears where there was nothing before. That kind of self-reliance adds up quietly, the same way the money you're not spending does.
Ingredients
- 1 lb plantain, yam, or sweet potato
Method
Slice the plantain or vegetable into thin chips, about 5 mm thick. A mandoline makes this fast and even, and even slices dry at the same rate.
Spread the slices in a single layer so none overlap. Use the dehydrator trays, or a parchment-lined baking sheet for the oven.
Dry until the slices are fully brittle with no soft or bendy spots. In a 200 F oven this takes about 2 to 3 hours. In a dehydrator the time depends on your machine and how thick you cut, so check and extend as needed.
Let the dried chips cool, then grind them to a fine flour in a food processor, high-speed blender, or grinder.
Store the flour in a sealed jar. It steps in roughly one-for-one for ordinary flours in most recipes, with coconut flour as the exception, since coconut flour behaves differently. Test it in a recipe before you count on the swap.
Dehydrator and oven note
This staple is built for the dehydrator, with the oven as the everyday backup. Both are written into the method above. The dehydrator runs low and hands-off and is the gentler, more even option if you have one. The oven at 200 F does the same job a little faster and is what most people will reach for. No pressure cooker or air fryer is useful here, since the goal is slow, complete drying, not browning or crisping.
