Shrimp and Asparagus Stir-Fry: a fast, fresh weeknight plate

There are evenings when you want real food on the table in the time it takes to set it. This is one of those dinners. Hot oil, shrimp and garlic, a handful of asparagus, a shower of cilantro, and you are done. On the road toward remission, having a few quick, clean meals you can reach for without much thought makes the harder days softer.
Shrimp is a lean protein and a source of selenium and iodine, both linked to thyroid and immune health. Asparagus brings folate and fiber and that bright, grassy snap. Cilantro lifts the whole pan with a fresh, green finish. It is light, it is fast, and it leaves you feeling fed rather than weighed down.
Keep the heat high and your eyes on the pan - this one moves quickly. That is part of its gift. A few honest minutes of attention, and a good plate of food. Slow down just long enough to notice the color of it before you eat.
Ingredients
- 8 ounces fresh asparagus
- 3 garlic cloves
- 1/2 cup cilantro leaves
- 3 tablespoons avocado oil
- 1 pound medium raw shrimp, deveined and shells removed
Method
- Snap or trim the woody ends from the asparagus and cut the spears into bite-size lengths. Thinly slice the garlic and roughly chop the cilantro leaves so everything is ready before you turn on the heat.
- Warm the avocado oil in a large skillet or wok over medium-high heat until it shimmers.
- Add the shrimp and the sliced garlic. Sear, turning once, until the shrimp turn pink and opaque, just a couple of minutes per side. Take care not to scorch the garlic.
- Add the asparagus and toss it through the hot pan until it turns bright green and stays crisp-tender, a few minutes more.
- Pull the pan off the heat, fold in the chopped cilantro, and serve right away while everything is hot and fresh.
Stovetop note
This dish is built for the stovetop and comes together in under fifteen minutes, so no appliance variation is needed. If you prefer, you can roast or air-fry the asparagus separately while you sear the shrimp, then toss them together at the end, though the single-pan method keeps it simplest and fastest.
