Apple chicken burgers: comfort food that stays inside the lines

There is a particular grief in giving up the foods that meant comfort. The burger, the bun, the easy weeknight pleasure of it. Recipes like this one matter because they hand some of that back. Grated apple keeps lean ground chicken moist, sage and thyme make it taste like autumn, and a tangle of caramelized onion on top makes it feel like a real meal rather than a compromise. Best of all, it binds without egg, so it fits the elimination stage as written.
Chicken is a source of protein, the material your body draws on for repair, and the apple folded into it adds a little fiber and sweetness. This is not medicine in the dramatic sense. It is steady nourishment that happens to taste good.

Ingredients
Caramelized onion topping:
- 2 slices bacon, chopped (clean-sourced)
- 1 large yellow onion, thinly sliced
- Sea salt
Burgers:
- 1 lb ground chicken (ground turkey also works)
- 1 small Granny Smith apple, peeled
- 1 tbsp coconut flour (optional binder)
- 1 tsp dried sage
- 1/2 tsp dried thyme
- 1 tsp garlic powder
- Sea salt (pepper omitted for AIP)
- Balsamic glaze, store-bought clean-label or homemade
Method
This is the stovetop baseline. Crisp the chopped bacon in a large skillet, then lift it out and set it aside, leaving the fat behind. Add the sliced onion to that fat and cook it low and slow, about 20 to 25 minutes, salting partway through, until it is soft and golden. Stir the bacon back in and set the topping aside.
Grate the peeled apple on the fine side of a box grater, then press out as much moisture as you can with your hands or a towel. Mix the grated apple into the ground chicken along with the coconut flour, sage, thyme, garlic powder, and salt. Shape into 4 or 5 patties.
Warm a little avocado oil in the skillet and pan-fry the burgers about 5 minutes per side, until they reach an internal 165 F. Pile the bacon-onion topping over each one, drizzle with balsamic glaze, and serve on butter lettuce or a bun you tolerate.
Grill variation
These also do well on a grill. Grill the formed patties over medium heat, about 5 minutes per side, until they reach 165 F, then top and serve the same way. If you are previously freezing the ground chicken, drain off the extra liquid first so the patties hold.
Keep the burgers and the onion topping in separate containers, 3 to 4 days refrigerated, and reheat gently on the stove.
