lemon-garlic shrimp stir-fried with bok choy and mushrooms, quick one-pan dinner

Shrimp goes from perfect to rubbery in about 30 seconds, which makes speed the whole difficulty and the whole gift of this dish. You give it roughly 2 minutes a side once it's in the hot oil, no more, which sounds stressful until you know exactly what you're watching for: shrimp that curl and turn pink and stop right there. On a night when you don't have the energy for anything complicated, that kind of speed works in your favor instead of against you.
Selenium is where this dish earns its keep, and a pound of shrimp holds a real amount of it. That mineral is tied to how your thyroid converts its hormones, which matters if Autoimmunity has settled into your thyroid the way it has for so many people doing this protocol. None of it changes how the pan works. You still just cook until the shrimp curl and turn pink.
Fold in the cilantro only once the pan is off the heat, so the leaves stay bright rather than going limp in the residual steam. A squeeze of fresh lemon and a scatter of green over pink shrimp turns a fast weeknight pan into something that actually looks finished.
Ingredients
- 1 tablespoon coconut aminos
- 1 tablespoon clean-label fish sauce
- 1 tablespoon honey
- 2 garlic cloves, crushed or minced
- 1 teaspoon lemon zest
- 1 pound raw shrimp, deveined and peeled (tail on if you like)
- 1 tablespoon avocado oil or coconut oil
- 4 ounces shiitake or other mushrooms, cut into bite-sized pieces
- 1 pound bok choy, cut into bite-sized pieces
- 3 tablespoons lemon juice
- Fresh cilantro, for garnish
Method
Stir together the coconut aminos, fish sauce, honey, garlic, and lemon zest in a small bowl. Add the shrimp and toss to coat. Let them sit for a few minutes while you prep the vegetables.
Heat the oil in a large skillet or wok over medium-high heat. Lift the shrimp out of the marinade, reserving the liquid, and cook them in a single layer until they turn pink and curl, about 2 minutes per side. Move the shrimp to a plate.
Add the mushrooms to the same pan and cook until they soften and release their moisture, about 3 minutes. Add the bok choy and cook until the stems are crisp-tender and the leaves wilt, another 2 to 3 minutes.
Pour in the reserved marinade and the lemon juice and let it bubble for a minute. Return the shrimp to the pan and toss everything together just until heated through. Take care not to overcook the shrimp. Finish with fresh cilantro.
