AIP Beef Patties

If you have been doing the work of an elimination phase, you know how much you miss the foods you can simply pick up and eat. A warm hand pie that holds together, travels in a lunch bag, and asks nothing of your gut is worth the extra steps. This one gives you that, with a dough built from plantain and green banana instead of grain, so nothing here is working against the healing you are after.

Beef earns its place on the plate here. It is a source of zinc, which is involved in immune regulation and tissue repair, and of vitamin B12, which supports nerve function and the steady energy that often runs thin when an autoimmune condition is flaring. The filling stays simple on purpose. Onion, garlic, oregano, and thyme carry the flavor so your body is fed, not provoked.

Ingredients

Patties (dough):

  • 2 ripe plantains
  • 4 green bananas
  • 1/2 cup cassava flour
  • Olive oil, for brushing the parchment paper

Beef filling:

  • 2 TBSP extra virgin olive oil
  • 1 lb extra lean ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup pitted green olives, chopped
  • 3 TBSP coconut aminos
  • 1 TBSP dried oregano
  • 1 TBSP dried thyme
  • 1.5 tsp sea salt
  • 1/4 cup cilantro, chopped

Method

  1. Peel the plantains and green bananas, cut them into large chunks, and boil in salted water until soft enough to mash, roughly 15 to 20 minutes.
  2. Drain well and mash while warm. Add the cassava flour and work it in until you have a soft, smooth dough that holds together. Let it rest while you make the filling.
  3. Heat the olive oil in a skillet over medium heat. Add the onion and cook until soft and translucent, then stir in the garlic for about a minute until fragrant.
  4. Add the ground beef and break it up as it browns. Stir in the green olives, coconut aminos, oregano, thyme, and sea salt. Cook until the beef is fully done and the liquid has mostly cooked off. Take it off the heat and fold in the cilantro. Let the filling cool slightly.
  5. Heat the oven to 375 F and line a baking sheet with parchment brushed lightly with olive oil.
  6. Divide the dough into equal portions. Press or roll each one into a round on a lightly oiled surface. Spoon filling onto one half, fold the dough over, and press the edges closed with a fork.
  7. Set the patties on the sheet and bake until firm and lightly golden, about 20 to 25 minutes. Cool a few minutes before serving.

Air fryer variation

Set the air fryer to 375 F. Cook the formed patties in a single layer, working in batches, for roughly 12 to 15 minutes until firm and golden, turning once partway through. Time is an estimate and untested, so check early and adjust.

Notes

  • Confirm the coconut aminos and green olives are clean-label, with no added sugar, additives, or nightshade or seed-based ingredients.
  • The dough is easiest to shape while still warm. If it stiffens, wet your hands lightly.
