AIP Carrot Cake with Coconut Frosting (from Heartbeet Kitchen)

Daniela shared this one from Heartbeet Kitchen: a moist, warmly spiced carrot cake made with tigernut flour and finished with a whipped coconut frosting. It came to us in her list of Core Elimination phase compliant baked goods.

The sugars in baked goods really add up, which is not supportive of healing, so keep it as an occasional treat, and read the ingredient list against the AIP Food List before you make it.
