Roasted Brussels Sprouts and Bacon with a Dairy-Free Ranch Seasoning

Crisp, savory, and full of a ranch-like flavor that comes back without any dairy. A well-browned pan of Brussels sprouts and bacon is a genuine pleasure, and it is nutrient-dense food you will want again.
Brussels sprouts are a source of vitamin C, which supports immune function and collagen formation, and they bring fiber that feeds the gut community you are rebuilding, along with the glucosinolate compounds studied for how they support the body's own detoxification enzymes. The bacon adds the fat that helps carry those nutrients, and the seasoning leans on garlic, onion, dill, and chives.
Halve the sprouts and let the cut sides brown hard against the pan. Choose firm sprouts and clean-label bacon, and give the roasting its full time so the edges char. A beautiful, well-browned pan is worth the wait.
Ingredients
- 1 lb Brussels sprouts, halved
- 1 tbsp extra virgin olive oil
- 8 slices bacon, chopped
- 2 tsp unfortified nutritional yeast (a reintroduction item; omit on strict elimination)
- 3/4 tsp dried parsley
- 1/4 tsp dried dill
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp dried chives
- 1/8 tsp sea salt
- black pepper omitted for AIP
Method
- Heat the oven to 425 F and line a baking sheet.
- In a bowl, toss the halved sprouts with the olive oil and the seasoning mix of unfortified nutritional yeast, parsley, dill, garlic powder, onion powder, chives, and sea salt until evenly coated. Spread them on the sheet and scatter the chopped bacon over the pan. (a reintroduction item; omit on strict elimination)
- Roast for about 30 minutes, until the sprout edges start to char and the bacon crisps.
Air fryer variation
Toss the sprouts and seasoning as above. Air fry at 375 F for roughly 12 to 15 minutes, shaking the basket once partway through, until the edges char. Add the bacon for the last several minutes so it crisps without burning. Time is an untested conversion - check at the earlier mark.
