Mains
Honey-Lime Chicken
Mains · serves 4 · under-15 min
Core AIP · Elimination phase compliant

6 ingredients, 1 skillet, and the result is bright and a little sweet without breaking a single rule of this way of eating. This is real proof that flavor and Autoimmune-friendly cooking belong together.
The chicken is a source of protein, which the body draws on for steady repair. Your immune system is a devoted, exhausted protector working from crossed signals, a case of mistaken identity rather than malice, and steady nourishment like this is part of what helps it settle back toward calm. The honey here is a small, deliberate amount, just 2 tablespoons across the whole skillet, sweetness in service of the flavor rather than the main event. The coconut aminos stand in for soy without any of what soy brings, so the whole plate stays clean.
Buy chicken raised well, and let the simple beauty of the dish register before you eat: the gloss of the glaze, the green of the lime. Serve it over a handful of greens or an autumn salad for color, take a breath, and slow down for the first bite. The state you eat in is part of how the food serves you.
Ingredients
- 1 pound chicken breasts, chopped
- 3 tablespoons coconut aminos
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon coconut oil
- 1 garlic clove, minced
The coconut aminos already stands in for soy sauce here, so no swap is needed. Every ingredient is AIP-compliant as listed.
Method
- Combine the chicken, coconut aminos, honey, lime juice, coconut oil, and garlic in a bowl or dish and marinate in the refrigerator for at least 1 hour.
- Pour the chicken and its marinade into a skillet over medium heat and sear, stirring, for about 5 minutes.
- Cover, drop the heat to low, and cook 15 to 25 minutes, until the chicken is cooked through and the glaze has thickened. Smaller pieces finish faster, so check before the longer mark. (verify - source figure)
