Zuppa Toscana

This is the deep, satisfying bowl Italian cooking is known for, built entirely from foods that belong on the Autoimmune plate. No grains, no dairy, no nightshades anywhere in the pot, and none of it reads as a lesser version of the original. Kale, celeriac standing in for potato, and a broth built from real bones and bacon fat carry all the weight a classic Tuscan soup needs.

The kale here is a source of vitamin K and folate, both involved in healthy blood and cell repair, and the ground beef brings protein and zinc, minerals linked to tissue healing and a steady immune response. Real, whole-food building blocks for a body doing the quiet work of moving toward Remission.

Honor the animal that gave the beef and the bacon. Let the broth simmer until it fills the kitchen, and take a slow breath before the first spoonful. A bowl made with your own hands is its own kind of care.

Ingredients

  • 6 slices bacon (clean label)
  • 1 small onion
  • 1 pound ground beef
  • garlic
  • 4 cups chicken broth
  • 1 large celeriac, peeled and chopped
  • 2 cups kale, chopped
  • 1/3 cup coconut milk

The source uses celeriac in place of the traditional potato and coconut milk in place of the cream, and both swaps are kept here so the soup stays free of nightshades and dairy. If celeriac is hard to find, turnip or green plantain work the same way. The classic Italian sausage is left out because it carries seed-spices that are not allowed in the elimination phase. Ground beef plus bacon carries the flavor instead.

Method

  • Cook the bacon in a stock pot until crisp. Lift it out and set it aside, leaving the rendered fat in the pot.
  • Soften the onion in that fat, then add the ground beef and brown it through.
  • Stir in the garlic for a short moment so it does not burn. Pour in the broth and add the chopped celeriac. Bring it to a boil, then drop to a simmer for about 20 minutes, until the celeriac is tender.
  • Fold in the kale and the coconut milk. Let the kale wilt. Crumble the reserved bacon over each bowl as you serve.

Instant Pot variation

Use the saute setting for the bacon, onion, beef, and garlic. Add the broth and celeriac, seal, and cook on high pressure for about 8 minutes with a quick release, then stir in the kale and coconut milk on saute until the kale wilts. Pressure time is kitchen-verify.
