Chicken Kabobs with Prosciutto and Apricots

This is the dish to make when you want to set a beautiful plate in front of people. Sweet apricot, salty prosciutto, and a balsamic-honey glaze read like something off a restaurant menu, and every ingredient here belongs at your table with nothing to swap. Chicken breast gives you lean, complete protein that supports tissue repair, and the prosciutto adds a savory depth. The apricots bring a little natural sweetness, just 2 apricots for the whole batch, and are a source of beta-carotene, a precursor your body uses to make vitamin A. It is a balanced, satisfying main, and that is exactly what a good meal is meant to be. There is a quiet pleasure in food made with another pair of hands, 1 person threading the skewers while the other watches the broiler. Ingredients
- 1 pound chicken breast, cubed
- 1 tablespoon avocado oil
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon sea salt
- 1 clove garlic, minced
- 2 apricots, sliced
- 3 ounces prosciutto
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- Metal skewers

Method
Start the marinade first. Toss the cubed chicken with avocado oil, dried rosemary, sea salt, and garlic. Cover and let it sit in the refrigerator for at least an hour, or overnight if you are planning ahead. When you are ready to cook, wrap each apricot slice in a strip of prosciutto. Thread the skewers, alternating the prosciutto-wrapped apricots with the marinated chicken cubes so each skewer gets a balance of both. Stir together the balsamic vinegar and honey for the glaze. Brush half of it over the assembled skewers. Heat the broiler. Broil the skewers 3 to 4 minutes per side, turning once, until the chicken is cooked through with no pink at the center. Finish by brushing on the rest of the balsamic-honey glaze just before serving. Substitutions from the source: grill the skewers instead of broiling if you prefer, use any stone fruit in place of apricots, or use dried apricots, one whole dried fruit per prosciutto strip. ### Air fryer variation These skewers work in the air fryer if your basket fits them, or use short skewers cut to size. Arrange them in a single layer and air fry at about 380 F for 10 to 14 minutes, flipping once, until the chicken is cooked through. Brush on the reserved glaze at the end.
