Mashed Roasted Garlic Sweet Potatoes

A warm, savory mash is one of the kinder things you can put on a plate. It feels like real comfort food, and it sits fully inside this way of eating with nothing to swap.

White-fleshed sweet potatoes carry complex carbohydrates and a good amount of potassium, involved in fluid balance and steady muscle function. The roasted garlic stirred through softens into something sweet and mellow. This is 1 nourishing side among many, and that steady accumulation of good plates is the whole point.

Use white or Hannah sweet potatoes here, the pale-fleshed kind that turn savory rather than sweet. Slice them with a little patience, layer them with care, and let the garlic and rosemary perfume the dish as it bakes. Simple food, made with attention, is its own kind of care.

Ingredients

  • 3 medium white sweet potatoes, sliced
  • 3 cloves garlic, sliced
  • 3/4 cup chicken broth (clean-label, AIP-compliant)
  • 3 tablespoons coconut oil
  • 1/2 tablespoon sea salt
  • 1 teaspoon dried rosemary

Note: this dish is already AIP as written with white or Hannah sweet potatoes. The source also offers gold potatoes as an option, which is a nightshade and not part of the elimination phase, so it is left out here. If you want to vary it, turnip or parsnip work as AIP swaps.

Method

Heat the oven to 350 F. Layer the sliced sweet potatoes in a baking dish so they overlap a little but still lie mostly flat.

Scatter the sliced garlic over the top. Pour in the chicken broth, dot or drizzle the coconut oil over everything, and season with the sea salt and dried rosemary. The broth keeps the potatoes moist as they soften and carries the garlic through the dish.

Bake for about 45 minutes, until the sweet potatoes are completely tender and a knife slides through with no resistance. Total oven time runs close to 55 minutes if your slices are thick.

Mash by hand for a rustic texture, or puree in a blender or food processor for a smooth, silky mash. Taste and adjust the salt before serving warm.
