This is the kind of plate that meets you on a tired evening. Tender beef patties bound with mashed sweet potato instead of breadcrumbs, seared until they hold, then simmered in a mushroom-and-onion gravy thickened with arrowroot or cassava. It is plain, warm, comfort food, and it asks nothing of you that the elimination phase forbids. When you are months into working an autoimmune condition toward remission and most familiar dinners are off the table, having a real Salisbury steak again is a small steadiness worth having.
The nourishment here is honest. Grass-fed beef is a source of zinc and iron, two minerals your body draws on for immune regulation and for repairing the gut barrier, which is often part of what an autoimmune protocol is trying to settle. The mushrooms add selenium and B vitamins alongside their savory depth. Nothing here cures anything. It simply gives your body usable building blocks in a form that tastes like dinner rather than like a protocol.
An animal fed this. Cook the beef with that in mind, brown the patties well so nothing is wasted, and let the gravy reduce into something glossy. Set it on the plate with care. The attention you bring to a simple meal is part of how you feed yourself through a long stretch.
Ingredients
For the patties:
- 1 lb grass-fed ground beef
- 1/2 cup pureed sweet potato
- 1 tablespoon coconut aminos (clean-label)
- 1 teaspoon salt
- 1 tablespoon avocado oil, for searing
- 1 cup mushrooms, sliced
- 1 small sweet onion, sliced
For the gravy:
- 3 cups beef broth (clean-label)
- 1 teaspoon fresh thyme
- 3 cloves garlic, minced
- 1 tablespoon garlic coconut aminos (clean-label)
- 3 tablespoons avocado oil
- 3 tablespoons arrowroot starch or cassava flour
- 1 teaspoon salt
Method
Put the ground beef in a mixing bowl with the pureed sweet potato, the coconut aminos and a teaspoon of salt. Work it together with your hands just until combined, then shape it into four oval patties about three-quarters of an inch thick. The sweet potato keeps them tender and holds them without any breadcrumb.
Warm a tablespoon of avocado oil in a large skillet over medium-high heat. Sear the patties for a few minutes a side until a brown crust forms and they release cleanly from the pan. They do not need to cook through yet, since they will finish in the gravy. Lift them out and set aside. Add the sliced mushrooms and onion to the same pan and cook, stirring now and then, until the onion softens and the mushrooms give up their liquid and start to color, about five to seven minutes.
For the gravy, push the vegetables to the side or scoop them out briefly, add the three tablespoons of avocado oil to the pan and stir in the arrowroot or cassava flour to make a paste, letting it cook for a minute. Pour in the beef broth a little at a time, whisking so no lumps form, then add the minced garlic, garlic coconut aminos, fresh thyme and the second teaspoon of salt. Bring it to a gentle simmer and let it thicken into a gravy.
Return the patties and any resting juices to the pan, spoon the gravy and vegetables over them, and simmer gently until the patties are cooked through and the gravy has reduced to the consistency you like, about ten minutes. Taste, adjust the salt, and serve warm with the gravy spooned over the top.
Air fryer variation
You can sear the patties in an air fryer to keep the stovetop free for the gravy. Brush them lightly with avocado oil and air fry at about 380F for roughly 8 to 10 minutes, turning once, until browned outside but not fully cooked through, then finish them in the simmering gravy on the stovetop as above. Air fryers vary, so treat this time and temperature as a starting point and check the patties as you go. The gravy still needs a pan.
