Charmoula roasted vegetables: one pan, North African brightness, no nightshades

Charmoula is the lemon garlic herb sauce at the heart of North African cooking, and this version keeps its bright, garlicky character while building entirely from real ingredients: herbs, citrus, and root spice instead of cumin and paprika. 1 pan, a few minutes of chopping, and 40 minutes in the oven while you do something else.
The plate is mostly color, and that is the point. Carrots are a source of beta-carotene, which the body converts to vitamin A, supporting immune and mucosal health, and the mushrooms and zucchini bring fiber and polyphenols that feed a healthier gut community. Garlic, lemon, and cilantro carry flavor that makes vegetables feel like a real dish. Pair it with a piece of fish or some chicken for a complete meal.
These are whole foods, grown and pulled from the ground, not manufactured. Arrange them so the colors show, orange against green, and take a breath before you eat. A few seconds of presence are part of the medicine.
Ingredients
- 8 carrots, chopped
- 2 zucchini, chopped
- 1 small onion, chopped (omit for interstitial cystitis or low-FODMAP)
- 1 cup mushrooms, chopped
- 1/4 cup coconut oil, melted
- 3 tbsp cilantro, chopped
- 3 tbsp lemon juice (omit for low-histamine or interstitial cystitis)
- 2 cloves garlic, minced
- 1 tsp dried parsley
- 1 tsp ground ginger
- 1/2 tsp sea salt
Note: the ingredient list is AIP Core as written. Traditional charmoula includes cumin and paprika; both are left out, since cumin is a seed spice and paprika is a nightshade, and the herbs, garlic, lemon, and ginger carry the flavor instead.
Method
Heat the oven to 350 F.
Put the carrots, zucchini, onion, and mushrooms in a single baking dish. Add the melted coconut oil, cilantro, lemon juice, garlic, parsley, ground ginger, and salt, and toss until everything is evenly coated.
Spread the vegetables out in one layer and roast for 35 to 40 minutes, until the carrots are crisp-tender and the edges begin to caramelize. Serve warm, alongside fish or chicken.
Air fryer variation
The air fryer gives these a deeper roast in less time. Toss the vegetables with the charmoula as above, then air fry at about 375 F for 18 to 25 minutes, shaking the basket once or twice, until the carrots are tender and the edges browned. Work in batches if your basket is small, so the vegetables roast rather than steam.
