A Provencal Stew That Skips the Nightshades, Not the Soul

Ratatouille is a stew from Nice, built in its classic form on tomato and eggplant, both nightshades. This version keeps the slow simmered, herb rich heart of the dish and swaps in golden beets and carrots where tomato and eggplant would go, sweet and earthy, holding their shape through a long, low cook.
The medicine here is in the color. Golden beets and carrots are a source of beta carotene, which the body converts to vitamin A in support of skin, vision, and immune tissue, and beets are a source of folate, involved in cell repair and renewal. The whole pot is dense with fiber that supports the gut, the terrain so much Autoimmune work begins in. This is the kind of dish you make on a Sunday and lean on all week.
It rewards patience and gets better with time, the flavors deepening over a couple of days. Eat it warm beside roasted meat or cold from the fridge on a hot afternoon, and let it be a quiet pleasure, beauty made from humble roots.
Ingredients
- 1/4 cup extra-virgin olive oil
- 2 medium golden beets, about 1/2 lb (in place of tomato)
- 3 medium carrots, about 1/2 lb (in place of eggplant)
- 4 garlic cloves
- 1 large yellow onion, about 3/4 lb
- 1 medium yellow summer squash, about 1/2 lb
- 1 medium zucchini, about 1/2 lb
- 1 tablespoon dried oregano
- 1 tablespoon fresh rosemary
- 1 teaspoon fine sea salt
Swaps made: golden beets and carrots stand in for the tomato and eggplant of classic ratatouille, both of which are nightshades and excluded on AIP. Everything else is AIP Core compliant as written.
Method
- Peel and dice the beets and carrots, and mince the garlic. Warm the olive oil in a heavy pot over medium-low heat.
- Add the beets, carrots, and garlic, cover, and let them sweat gently for about 20 minutes, stirring now and then, until they begin to soften.
- Stir in the diced onion, the summer squash and zucchini, the oregano, the rosemary, and the salt. Cover again and cook until everything is tender, about 20 minutes more.
- Serve hot or cold. For a softer, more melded texture, give it another 10 to 15 minutes.
This is a strong batch-cooking candidate. Serve it chilled in summer, hot in cooler months beside lamb, pork, or poultry, or spooned over cauliflower rice as a light meal on its own. A reader swap worth knowing: sweet potato in place of the beets.
Instant Pot variation
Set the Instant Pot to saute and warm the olive oil. Soften the beets, carrots, and garlic for a few minutes, then add the onion, squashes, herbs, and salt. Lock the lid and pressure cook on low for a short interval, then release pressure carefully and stir. Root vegetables soften fast under pressure, so start with the shortest reasonable time and finish on saute if you want them firmer. This suits the dish well because ratatouille is forgiving and only improves as the flavors meld.
