AIP hotdog boats - sweet potato 'buns' with clean-label sausages and a nomato sweet potato gravy

The real work on this dish happens in the sausage aisle, standing there turning a package over to check for paprika, chili powder, and the seed spices that hide in cheap fillers during the elimination phase. Most of what is on the shelf will not pass, which is its own quiet tax on an ordinary Tuesday dinner. Once you find a sausage that actually reads clean, you get back one of the everyday, everyone-eats-the-same-plate dinners that get harder to hold onto deep into the months of steady work toward Remission.

The sweet potato earns its double duty here, crisping into a sturdy boat and, once scooped and blended, thickening the gravy with no flour at all. Underneath the trick, the body turns a share of it into vitamin A, useful for the skin and the gut lining that face the outside world, plus a solid amount of potassium.

Reading a label that closely is its own kind of respect, both for the animal that gave the meat and for the body doing the healing. Warm the boats through, spoon the gravy generously, and let this be the plain, good dinner it already is.

Ingredients

  • 2 sweet potatoes, already baked
  • Coconut oil, for brushing
  • 4 clean-label hot dogs or sausages (see the swap note below)
  • 1 carrot, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 to 3 tablespoons nomato sauce (the ARM beet-and-carrot nomato sauce, in place of tomato paste)
  • Fine sea salt, to taste

A note on swaps: the original calls for tomato paste, mustard, and black pepper, all of which the elimination phase excludes. Here the tomato paste becomes a couple of spoonfuls of nomato sauce for the same body and gentle tang, and the mustard and black pepper are simply left out. Use clean-label hot dogs or sausages: read the label and make sure there are no nightshade spices such as paprika or chili, no seed spices, no added sugar, and no dairy. Most supermarket sausages will not pass; chopped cooked chicken is a clean fallback if you cannot find a compliant one. Cured and processed pork can be high in histamine, so this one is flagged low_histamine: no.

Method

Heat the oven to 450 F. Halve the baked sweet potatoes lengthwise and scoop a shallow channel down the middle of each half, reserving the flesh in a bowl. You want a sturdy boat, so leave a good wall.

Brush the halves with coconut oil and sprinkle with salt. Lay them cut-side down on a baking sheet and bake about 20 minutes, until the skins crisp and the edges color.

While they bake, brown the sausages in a skillet, then set them aside. In the same pan, soften the onion, carrot, and garlic until tender. Add the broth, nomato sauce, and a little salt, and simmer covered for about 20 minutes.

Pour the sauce into a blender with the reserved sweet potato flesh and blend until smooth and thick. Taste and adjust the salt.

Set a sausage in each crisped sweet potato boat and spoon the warm gravy over the top.

Air fryer variation

Crisp the scooped sweet potato halves in the air fryer at 400 F for about 10 to 12 minutes, cut-side down, until the skins are firm and the edges brown. You can warm or brown the sausages in the same basket for the last few minutes. The gravy is still made on the stovetop and blended. This air fryer time is an ARM-derived conversion and is flagged for kitchen testing.
