Silky mashed 'potatoes', 3 ingredients, no dairy

White sweet potato and good bone broth are all it takes to build something silky, savory, and completely dairy free. Just 3 ingredients, no butter, no cream, no nightshade. Real food, simply prepared, built around what supports you.

Bone broth is a source of collagen and glycine, which support the integrity of the gut lining, part of the terrain an immune system on high alert relies on to grow calmer. The sweet potato adds potassium, involved in fluid balance and muscle function, and vitamin A, which supports the gut and skin. The quality of your broth carries the whole dish, so use the best you have.

There is a quiet pleasure in a side this simple. Nothing to fuss over, nothing to second guess. Set it next to good meat or fish, take a breath, and let it be exactly what it is.

Ingredients

  • 2 lb white sweet potatoes, peeled and cubed
  • 1.5 cups beef or pork bone broth
  • 1/2 tsp sea salt

All ingredients are AIP Core compliant as written. No swaps needed.

Method

  • Cook the cubed sweet potato in the bone broth until fork-tender.
  • Blend the potatoes, broth, and salt at least 30 seconds, until silky. A high-powered blender gives the smoothest texture; a food processor also works.
  • Serve warm as a side for meat or seafood.

Instant Pot variation

Add the cubed sweet potato and broth to the pot, seal, and pressure cook 10 minutes. Blend with the salt at least 30 seconds until silky. (Pressure time per source.)

Stovetop variation

Steam the cubed sweet potato over the bone broth about 15 minutes, until fork-tender, then blend the potato, broth, and salt at least 30 seconds. The steam time is from the source and not tested here, so check for tenderness before blending.
