Herb-marinated fried chicken that crisps without a single egg or grain

This dish proves fried can still belong on your plate. There is no batter, no flour, no egg. The crust comes from a green herb oil that turns golden in the heat as you marinate, pan-fry, and eat.
This is real nourishment, not a stand-in. Chicken is a clean source of protein, the building material your body leans on while it repairs. Cilantro and parsley are a source of vitamin C, involved in collagen formation and tissue repair, and ginger and turmeric bring warm aromatics long central to food-as-medicine cooking. This is a plate that supports the work your body is already doing.
There is a quiet honor in cooking a bird this simply: 1 pound of chicken, a handful of fresh green things, a little salt. Let the kitchen smell like ginger and garlic for a few minutes. That is enough.
Ingredients
- 1/2 cup coconut oil
- 1/4 cup green onion
- 1/4 cup cilantro
- 1 1/2 tbsp ground ginger
- 3 garlic cloves
- 1 tbsp parsley
- 1 tsp sea salt
- 1/4 tsp ground turmeric
- 1 lb chicken breasts

Method
Add everything except the chicken to a blender and run it until you have a smooth green herb sauce. Coat the chicken in the sauce and let it marinate for 30 minutes. Warm a little oil in a skillet over medium-high heat and pan-fry the chicken for about 15 minutes total, turning once, until the outside is browned and the inside is cooked through. Serve with cauliflower rice, roasted vegetables, or a simple salad.
Air fryer variation
This works well in an air fryer. Marinate as written, then lay the chicken in a single layer in the basket. Cook at 380 F for roughly 15 to 18 minutes, turning once, until browned and cooked to 165 F internal. The herb oil still crisps the surface without any added batter.
