Taco night belongs on your table just as it is. This is taco flavor rebuilt from the ground up, without the chili powder, cumin, or tomatoes, using warming spices that carry the same craveable depth. You layer everything into a slow cooker, walk away, and come back to a warm, savory bowl. A meal that cooks itself while you live your life is real support on a full week.
Grass-fed beef brings protein and is a source of zinc, which is involved in immune regulation and in the repair of the gut barrier, the single-cell lining whose integrity matters for an immune system working to find its calm. The zucchini and mushrooms add fiber and water that feed a healthier gut community. The ginger and oregano are not just there for flavor; they are the warming aromatics that carry the whole pot.
An animal was raised for the beef in this pot, so source it well and use it with gratitude. Before you eat, take a breath and look at the bowl: the green of the zucchini, the dark of the mushrooms, a spoonful of guacamole if you have it. A few minutes of presence at the table is part of how the meal serves you.
Ingredients
- 2 1/2 cups chicken broth
- 3/4 lb ground beef
- 1 cup chopped zucchini
- 1 cup chopped mushrooms
- 1/2 cup chopped onion (omit if onion bothers you)
- 2 tablespoons chopped green onion
- 2 tablespoons coconut milk
- AIP taco seasoning: 2 teaspoons onion powder, 2 teaspoons ground ginger, 1 teaspoon sea salt, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/4 teaspoon dried parsley, 1/4 teaspoon dried dill
Method
Add everything to the slow cooker at once: the broth, raw ground beef, zucchini, mushrooms, onion, green onion, coconut milk, and all of the seasoning. Stir once so the spices distribute. Cover and cook on low for about 4 hours, until the beef is cooked through and the vegetables are tender. There is no need to brown the beef first, though you can if you prefer a deeper flavor. Taste before serving and adjust the salt. Ladle into bowls and top with guacamole, olives, or a compliant salsa if you have one on hand.
Instant Pot variation
Use the Instant Pot as a multicooker here. For the same hands-off result, add everything to the pot and use the slow-cook setting on low for about 4 hours. When you are short on time, you can convert to pressure: add all ingredients, seal, and cook on high pressure, then let the pressure release naturally. Pressure time is untested here, so start in the range of 8 to 10 minutes and check that the beef is cooked through and the vegetables are tender. If you want a browned-beef flavor, use the saute setting to brown the meat right in the pot first, then add the rest and proceed.
