Tom kha gai: the soup that makes the elimination phase feel like a gift

There is a moment, usually around week two of AIP, when you realize you are not just eating to be careful - you are learning what food can actually taste like when it is doing real work. This soup lives in that moment.
Tom kha gai is a Thai coconut chicken soup built on ginger, lemongrass, and lime, and the good news is that it is already largely AIP as it is traditionally made. The coconut milk delivers medium-chain triglycerides, which your body can use quickly for energy. Fresh ginger is linked to reduced inflammatory markers in the research - not a cure for anything, but a plant with a long history of use for a reason. Together with the clean protein from chicken thighs and the brightness of lime, this soup is genuinely nourishing, and it will not feel like deprivation.
Lemongrass gives the broth its floral, citrus-forward lift. If you have access to a fresh stalk, bruise it and add it whole. If you are using lemongrass essential oil (food-grade only), two shakes into the finished broth does the same work. Either is AIP-compliant, and either is worth seeking out - the flavor payoff is real.
A note on the life that feeds you: a good piece of chicken, sourced well, is a gift. Pasture-raised when you can find it. Taking a breath before you eat matters here, not as ritual for ritual's sake, but because your nervous system has to be out of threat mode for digestion to work well. Sit. Notice the color of the broth. This is food as medicine, and it is also beautiful.
Ingredients
- 5 cups water
- 3 lbs boneless, skinless chicken thighs
- 4 cups mixed vegetables, sliced (zucchini, mushrooms, and celery work well)
- 8 oz canned water chestnuts, rinsed (optional)
- 1 can (15 oz) full-fat coconut milk
- 3 green onions, sliced
- 1 lime, juiced
- 3 tablespoons fresh ginger, minced or grated (or 2 teaspoons dried ginger powder)
- 2 tablespoons coconut aminos
- 1 tablespoon plus 1 teaspoon sea salt
- 1 tablespoon fish sauce (clean-label, no additives)
- 1 tablespoon coconut sugar
- 1 stalk fresh lemongrass, bruised and tied, or 2 shakes food-grade lemongrass essential oil
- 1/4 cup fresh cilantro or mint, for serving
Method
Place the chicken thighs in a large pot with the water. Bring to a boil over medium-high heat, then reduce to a steady simmer. Skim any foam that rises in the first few minutes. Cook until the chicken is cooked through and tender, about 20 minutes.
Lift the chicken out and set it on a cutting board. Add the sliced vegetables, water chestnuts (if using), and lemongrass stalk to the simmering broth. Cook until the vegetables are just tender, about 8 to 10 minutes.
While the vegetables cook, shred or roughly chop the chicken and return it to the pot. Add the sea salt, coconut aminos, fish sauce, coconut sugar, and ginger. Stir to combine.
Remove from heat. Pour in the coconut milk and stir gently - adding it off the heat keeps it from separating. Add the lime juice and green onions. If using lemongrass essential oil, add it now. Remove the lemongrass stalk if you used a fresh one.
Taste and adjust salt. Ladle into bowls and top with fresh cilantro or mint.
Instant Pot variation
Add the chicken thighs, water, salt, ginger, coconut aminos, fish sauce, coconut sugar, lemongrass stalk, and vegetables to the Instant Pot. Seal the lid and cook on high pressure for 15 minutes. Allow the pressure to release naturally for 10 minutes, then vent the remaining steam. Open, lift out the chicken, and shred or chop it. Return the chicken to the pot. Stir in the coconut milk and lime juice with the pot on the 'Keep Warm' setting. Top with green onions and herbs before serving.
