All-Purpose Herb Sauce

When you are working with a short list of permitted seasonings, a sauce that can travel - over roasted meat, spooned onto fish, stirred into cauliflower, used as a dip for root vegetables - is worth keeping in the refrigerator at all times. This herb sauce is that kind of kitchen workhorse. It takes less than ten minutes to make, holds for several days, and changes the feeling of a simple plate into something more intentional.
Fresh herbs are concentrated sources of polyphenols, the plant compounds linked to antioxidant activity and general cellular support. Mint, parsley, and rosemary each bring a distinct aromatic profile, and olive oil helps carry those compounds and carries its own well-studied relationship with inflammation. It is a small thing, this sauce - and it is worth making regularly.
Ingredients
- 1/2 cup fresh mint leaves
- 1/4 cup fresh flat-leaf parsley
- 1 tablespoon fresh rosemary
- Pinch of sea salt
- 2 teaspoons apple cider vinegar
- 1/2 cup extra virgin olive oil
Method
Place the mint, parsley, and rosemary in the bowl of a food processor or blender. Add the sea salt and apple cider vinegar. Pulse several times until the herbs are finely chopped and beginning to come together.
With the processor running on low, drizzle the olive oil in steadily through the feed tube. Continue processing until the sauce is smooth and emulsified, stopping to scrape down the sides once if needed. Taste and adjust salt or vinegar as you like.
Transfer to a small jar with a tight lid. The sauce keeps well in the refrigerator for up to 5 days. The olive oil may solidify slightly when cold - simply bring it to room temperature for a few minutes before using and stir to recombine.
Spoon it over sliced beef, roasted chicken, grilled fish, or any roasted root vegetable. It also works as a simple dipping sauce for plantain chips.
