AIP raspberry-cherry kombucha mocktail - fruit syrup layered with ginger kombucha and rosemary for holiday entertaining

Holiday tables are full of glasses already filled with something, and it is easy to feel like the odd one out holding a mocktail. This one was built so nobody has to know it is not wine unless you tell them: a layered cherry-raspberry syrup under fizzing ginger kombucha, finished with rosemary. Make the syrup the day before, while the kitchen is calm, so assembly at the party takes 2 minutes and a little bit of showing off.

Ginger is where the real work happens here. Its gingerols are among the compounds researchers tie to calming an immune system running too hot, and the kombucha itself is fermented, so it arrives with live cultures tied to a more varied gut microbial population. Keep this in perspective: it is a party drink that happens to carry some good things, and treating it as more oversells it.

The rosemary sprig does more than decorate. Let it sit in the glass the whole time, so it keeps releasing scent while you drink. Pour the syrup first, watch it vanish under the kombucha as you pour, and take that first sip standing right where the party is happening. You get to be fully at this table, glass in hand, same as everyone else.

Ingredients

For the syrup:

  • 2 cups frozen pitted cherries, thawed
  • 2 cups fresh raspberries
  • 1/4 cup water
  • 1 tablespoon honey

To assemble each glass:

  • 1 tablespoon fruit syrup
  • Ice
  • About 3/4 cup ginger kombucha
  • A 2-inch sprig of fresh rosemary

Method

Put the cherries, raspberries, water, and honey in a small saucepan. Simmer about 20 minutes, until slightly thickened, watching that it does not boil over.

Let it cool, then blend until smooth and chill it. The syrup keeps in the fridge and is made ahead on purpose.

To serve, spoon the syrup into the bottom of a tall glass. Add ice, then pour the ginger kombucha over the top so it stays layered. Finish with a sprig of rosemary and let each person stir their own. The rosemary is the signature move here, so do not skip it.

A note on the kombucha: a clean, store-bought ginger kombucha works well. Confirm the label is elimination-phase compliant, with no added flavors or sweeteners that are off plan.

This is a simmer-and-assemble drink, so it needs no air fryer or Instant Pot variation.
