14 days sounds like a long wait until you realize what you're actually trading it for: 1 jar that pours out 16 servings, the effort happening exactly once before it just sits ready in the fridge for weeks. On a protocol that asks you to keep saying no in the moment, having a yes already made is worth the wait.
Blackberries and raspberries give this its color, and they're a source of polyphenols, one of the plant-compound families this bank keeps an eye on for a loose connection to a quieter immune response. One honest note worth keeping: this has a kombucha-like tang but meaningfully fewer probiotics than kombucha, so don't expect a probiotic boost from it. The reputation these vinegar drinks have in Thai cooking as a digestive helper isn't settled science, so enjoy this one for what it verifiably is, a good drink. Apple cider vinegar drinks like this one tend to be a problem if histamine is something you are watching closely, or if interstitial cystitis is part of your picture, so this one is not the right fit for every student, tagged AIP or not.
Strain it, bottle it, and set it in the door of the fridge where you'll actually see it. Pour 1 ounce over ice, top it up, and take a second to register that the version of you who made this 2 weeks ago was looking out for the version of you drinking it today.
Ingredients
- 2 cups apple cider vinegar
- 1 cup blackberries
- 1 cup raspberries
- 1 cup honey
- Sparkling water, to serve
Method
Combine the berries and the apple cider vinegar in a 1-quart jar, seal it, and let it infuse at room temperature for 7 days.
Strain out the berries and return the vinegar to the jar. Add the honey, shake to combine, then refrigerate for 7 more days, shaking now and then.
To serve, pour 1 ounce of the concentrate over ice in a 16-ounce glass and top with sparkling water.
A note on swaps: this is a forgiving template. Basil, apple, peach, pineapple, pomegranate, a ginger-honey infusion, or a turmeric-honey infusion all work in place of the berries, and the ratios are flexible since you dilute to taste.
This is a no-cook infusion, so it needs no air fryer or Instant Pot variation.
