AIP Thai basil agua fresca - fresh basil blended with lime and honey, strained and topped with sparkling water

6 months into an elimination phase, your drinks rotation starts to feel like the same 4 flavors on repeat: lime, mint, ginger, water. Basil is the one nobody thinks to reach for, and that's exactly why it earns a spot in this week's rotation.

Fresh basil is a source of polyphenols, and its aromatic oils are part of what gives Thai cooking its signature lift. The basil is flavor first here, whatever else it's doing for you is a quiet bonus, not the headline. The half cup of honey is real talk though: this drink runs sweet enough to be a treat, so save it for the afternoon that actually calls for something special, and go lighter on the honey if you're watching blood sugar.

Strain it clear before you pour, so the glass looks like something you'd order instead of something thrown together in a hurry. That small extra step, the straining, the ice, the color, is what turns a kitchen experiment into an occasion worth having.

Ingredients

  • 4 cups fresh basil
  • 1 1/2 cups water
  • 1/2 cup lime juice
  • 1/2 cup honey
  • 4 cups sparkling water

Method

Add the basil, the still water, the lime juice, and the honey to a blender. Blend until smooth.

Strain the mixture into a pitcher to catch the basil solids.

Stir in the sparkling water and serve cold over ice.

This is a blended, no-cook drink, so it needs no air fryer or Instant Pot variation.
