Blueberry-melon agua fresca: a cooler with nothing to hide

There is a particular kind of tiredness that comes with reading every label. This drink can stand in for an old habit, like reaching for a can of soda, without asking anything of your gut. It came about, in the original, from using up a watermelon that does not keep well once cut. Nothing wasted, nothing complicated.
Watermelon and blueberries both carry water-soluble vitamin C, which is involved in collagen formation and supports the tissues that line and repair the body. The deep color of blueberries comes from anthocyanins, plant compounds often studied for their antioxidant activity. There is no added sweetener here; the fruit does all the work.
Make it in a clear pitcher and let the color do its work. A few minutes, a sharp blade, and you have something worth slowing down for.
Ingredients
- 1 small watermelon, peeled and chopped
- 1 cup blueberries
- 1/4 cup chopped fresh mint
- 1/4 cup lime juice
- 1.5 cups sparkling water
- Ice, for serving
No swaps needed. This is AIP compliant as written, with no added sweetener.
Method
Add the watermelon, blueberries, mint, and lime juice to a blender and run until completely smooth. If your blender is small, work in batches so nothing strains the motor.
Pour the blended mixture into a pitcher. Add the sparkling water and stir gently to keep the bubbles. Serve over ice.
