Flank Steak with Basil Chimichurri: a green, herby finish on a simple cut

Some nights you want protein that comes together without fuss and still tastes like you cared. This is that meal. A good flank steak, salted and seared, then crowned with a vivid green sauce of basil, parsley, garlic, and shallot. Ingredients

For the steak:

  • 2 pound flank steak, halved lengthwise if more than 4 to 5 inches wide
  • 2 teaspoons sea salt

  • 1 tablespoon olive oil

For the sauce:

  • 1/2 bunch flat leaf parsley
  • 1/2 cup packed basil leaves
  • 1 medium shallot, roughly chopped
  • 1 teaspoon salt
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil

Method

Season the flank steak all over with the sea salt and the minced garlic, and let it sit while you heat the oven. Set the oven low for a gentle reverse-sear so the meat cooks evenly through before it gets its crust. Roast the steak slowly until it reaches just under your target doneness, then pull it out. Heat the olive oil in a heavy skillet over high heat and sear the steak hard on both sides until it is browned and crusted. Move it to a board, tent it, and let it rest while you make the sauce.

For the chimichurri, combine the parsley, basil, shallot, salt, apple cider vinegar, and olive oil in a blender or food processor and pulse until it comes together into a loose, bright green sauce. Taste and adjust the salt and vinegar.

Slice the rested steak thinly against the grain, lay it out on a platter, and spoon the chimichurri generously over the top. Serve warm.
