AIP Dandelion Chicory Latte

Giving up coffee is one of the harder adjustments on the elimination phase, especially if coffee has been part of your morning for years. This latte does not pretend to be coffee. It is something else - earthy, warming, bitter in a gentle way - and it is genuinely satisfying once you make it your own morning ritual. Roasted dandelion root and roasted chicory root steep into a dark, rich brew that holds up to steamed coconut milk the same way espresso holds up to oat milk. It takes about five minutes. You can make it every day.

Dandelion root supports liver detoxification pathways - it has been used in herbal medicine for this purpose for centuries, and some research suggests it may support bile production and flow. Chicory root is a source of inulin, a prebiotic fibre that is involved in feeding beneficial bacteria in the gut. Both of these matter when you are working an autoimmune condition, because the liver and the gut are central to the terrain you are trying to shift. These are gentle supports, not interventions. Steady daily use is how they work.

There is something right about starting the morning with a cup of something warm, made with intention. This one asks almost nothing of you.

Ingredients

  • 2 tsp roasted dandelion root
  • 1 tsp roasted chicory root
  • 3/4 to 1 cup hot water (just off the boil)
  • 1/4 cup full-fat, additive-free coconut milk
  • Dash of cinnamon

Both roots should be roasted, not raw, for the best flavour. Roasted versions are widely available as herbal teas and coffee alternatives. Check the label to confirm there are no added grains, flavourings, or other ingredients.

Method

Add the dandelion root and chicory root to a French press or a small teapot with a strainer. Pour in the hot water and let it steep for 5 to 10 minutes - longer steeping gives a stronger, more bitter brew. Press or strain into your mug.

While the roots steep, warm the coconut milk in a small saucepan over low heat, stirring gently. Do not let it boil. When it is hot and beginning to steam, whisk it briskly or use a small handheld frother until it is foamy.

Pour the steeped root brew into a mug. Pour the steamed coconut milk over the top, holding the foam back at first with a spoon, then spooning the foam over the surface. Add a small dash of cinnamon.

Drink it warm.

Variations

For a stronger, more coffee-like flavour, use 3 tsp dandelion root and 1 1/2 tsp chicory root.

A small amount of maple syrup or coconut sugar stirred in before the coconut milk rounds the bitterness without masking the earthy flavour.

Some people find straight coconut milk too rich in this preparation. Diluting it with a little water before steaming gives a lighter result.

Notes

Both dandelion root and chicory root are widely available in health food shops as individual loose herbs or blended 'coffee alternative' products. If purchasing a blend, read the label carefully to confirm no grains (barley is common in chicory blends) or excluded additives.

Chicory root is high in fructans, which are FODMAPs. If you are also following a low-FODMAP protocol alongside AIP, use chicory root cautiously and track your response. Dandelion root is generally better tolerated.
