AIP vegan frozen dessert made from coconut milk, medjool dates, and roasted carob powder, churned to a smooth ice cream

Cocoa has enough histamine in it that it does not belong in your kitchen right now, and if chocolate was where you went for comfort, losing it is a real loss, not a small one. This dessert is not chocolate's stand-in, and it never tries to be. Once the base is blended, chilled, and churned, what comes out of the machine is rich and faintly earthy on its own terms.

The fiber and polyphenol compounds in roasted carob are the kind of plant nutrients that research keeps tying to a healthier gut microbiome, one part of the gut terrain that matters during the AIP elimination phase. Potassium and magnesium in this base come mostly from the medjool dates, minerals involved in ordinary enzyme function and nervous system regulation throughout the body.

There is something worth noticing in making a dessert like this from 5 whole ingredients, by hand, on an evening when you actually have a little time to give it. Eat it from a good bowl, slowly, and let yourself actually enjoy it. Tonight, this dessert is enough on its own terms.

Ingredients

  • 2 cups full-fat coconut milk
  • 8 to 10 large medjool dates, pitted
  • 1/3 cup roasted carob powder
  • 1 teaspoon vanilla powder [use vanilla powder, not vanilla extract - vanilla extract is alcohol-based and excluded in AIP elimination; omit entirely if you cannot source clean vanilla powder]
  • 1/8 teaspoon salt

Use roasted carob powder, not raw - the roasted version has a deeper, more cocoa-like flavour. Check your coconut milk label for additives - full-fat with no guar gum or stabilisers is ideal.

Method

If your dates are very dry, soak them in warm water for 10 minutes and drain before using. Check each date for any remaining pit fragments.

Combine the coconut milk, pitted dates, carob powder, vanilla powder (if using), and salt in a high-speed blender. Blend on high for 60 to 90 seconds until completely smooth. The dates should be fully broken down with no lumps or fibrous pieces remaining. Scrape down the sides once and blend again briefly if needed.

Taste the base. It should be chocolatey in its richness, slightly earthy, and sweet - but not cloying. Add one extra date if you want more sweetness, or a small extra pinch of salt to sharpen the carob flavour.

Pour the blended base into a lidded container and refrigerate for at least 2 hours, or overnight. This chilling step is important - an ice cream maker works best with a cold base.

Churn the cold base in your ice cream maker according to the manufacturer's instructions, typically 20 to 25 minutes, until it reaches a thick, soft-serve consistency.

For firmer ice cream: transfer immediately to a freezer-safe container, press a piece of baking paper or cling film directly onto the surface to prevent ice crystals forming, seal the container, and freeze for at least 2 hours. Remove from the freezer 5 to 10 minutes before scooping to allow it to soften enough to scoop cleanly.

Eat at soft-serve consistency straight from the machine for the smoothest texture.

No-churn variation

Pour the chilled blended base into a wide, shallow freezer-safe container. Freeze for 30 minutes, then stir vigorously with a fork, scraping the frozen edges toward the centre. Return to the freezer. Repeat every 30 minutes for 2 to 3 hours. The texture will be slightly icier than the machine-churned version but still enjoyable. Soften for 5 to 10 minutes before serving.
