The marinade takes only a few minutes to stir together. The real ask is patience: at least 30 minutes, and up to 4 to 8 hours or overnight for the best flavor. The lemon and garlic need that time to work into the meat, and on a day already low on patience, the wait can be the harder part than the cooking.
Lemon juice is a genuine source of vitamin C, which supports collagen synthesis and plays a role in antioxidant defense, useful work for a body managing Autoimmunity in more ways than the skin alone. Thymol, the compound behind fresh thyme's antimicrobial and antioxidant properties, is quietly part of what the marinade is doing here too.
Drumsticks are bone-in, skin-on, meant to be picked up and eaten with your hands, which is a more honest way to meet where this meat actually came from than eating around it with a fork. Source them well if you can. Good sourcing matters more here than with cuts once removed from the shape of the animal.
Ingredients
- 2 lbs chicken drumsticks
- 1/3 cup avocado oil
- Juice from 1 lemon
- 2 garlic cloves, pressed
- 2 tbsp fresh thyme leaves
- 1/2 tsp salt

*Low-FODMAP note: garlic is high-FODMAP. For a low-FODMAP version, steep the garlic cloves in the avocado oil for 10 minutes, then remove before using the oil in the marinade.*
*Low-histamine note: lemon juice acts as a histamine liberator in some individuals. If histamine is a concern, substitute with a small amount of apple cider vinegar or omit the acid entirely.*
Method
In a bowl or large zip-lock bag, combine the avocado oil, lemon juice, pressed garlic, thyme leaves, and salt. Stir to combine.
Add the drumsticks and turn to coat on all sides. Seal or cover and refrigerate for at least 30 minutes. For deeper flavor, marinate for 4 to 8 hours or overnight.
When you are ready to cook, preheat the oven to 200C / 400F. Line a rimmed baking sheet with parchment paper.
Remove the drumsticks from the marinade and arrange them in a single layer on the prepared baking sheet. Leave space between each piece so the heat can circulate.
Bake for 40 to 45 minutes, flipping once at the 20-minute mark, until the skin is golden and the internal temperature at the thickest part reaches 74C / 165F. Rest for 5 minutes before serving.
Air fryer variation
Remove the drumsticks from the marinade and arrange in the air fryer basket in a single layer. Work in batches if your basket is small. Air fry at 190C / 375F for 22 to 25 minutes, flipping once at the halfway point. The skin will be crispier than the oven version and the fat will render more completely. Check the internal temperature reaches 74C / 165F before serving.
Stovetop or grill alternative
To cook on the stovetop, heat a cast-iron or heavy-based skillet over medium-high heat. Sear the drained drumsticks for 4 to 5 minutes per side until well-browned. Lower the heat, cover loosely, and continue cooking for 20 to 25 minutes, turning occasionally, until cooked through.
On a grill, cook over medium heat with the lid closed, turning every 8 to 10 minutes, for 30 to 35 minutes total. Watch for flare-ups from the oil in the marinade. The grill adds a light char to the thyme and garlic that works very well here.
