Bacon-Date Crusted Salmon

Reading labels at the grocery store, hunting for bacon without paprika or chili hidden inside, is exactly the kind of small, invisible labor AIP asks of you that nobody else in the house has to think about. Find a clean one and this dish turns from a workaround into something worth setting on the table for guests.

Salmon is one of the more dependable food sources of vitamin D, a nutrient tied to how well the immune system can regulate its own responses, and one that quietly runs low across a long winter regardless of how carefully you eat otherwise. The bacon and date crust on top is where the indulgence lives, and the fish underneath is where the medicine is.

2 animals go into this pan, the salmon and the pig behind the bacon, and a plate this rich is worth a pause before the first bite, even just long enough to notice the smell of rosemary and hot fat. Scatter the lemon zest right before serving so it stays bright against all that sweetness and salt.

Ingredients

  • Coconut oil, for greasing the dish
  • 2 (6-oz) salmon filets
  • 4 Medjool dates, pitted
  • 3 slices bacon (see note)
  • 2 teaspoons rosemary, finely minced
  • 1 tablespoon garlic, finely minced
  • 1 tablespoon lemon juice
  • Lemon zest, for serving

Bacon note: Choose a clean-label bacon cured without paprika, chili, or other nightshade spices. Many commercial bacon brands include these spices in the cure; read the label or source from a trusted butcher to keep this AIP elimination-compliant.

Method

  1. Preheat the oven to 400 F. Lightly grease a small baking dish with coconut oil.
  2. Place the salmon filets skin-side down in the prepared dish.
  3. Finely chop the pitted dates and the bacon into small, even pieces. Combine in a bowl with the minced rosemary, minced garlic, and lemon juice. Mix into a rough, sticky paste.
  4. Press the bacon-date mixture onto the tops of the salmon filets, distributing it evenly and pressing it down gently so it adheres.
  5. Bake for 12 to 15 minutes until the salmon is cooked through and flakes easily when pressed at the thickest part. The bacon at the edges of the crust will be crisping.
  6. Remove from the oven, scatter lemon zest over the top, and serve immediately.
