Chicken-Lime Soup with Avocado

A clear, restoring bowl, the kind of soup that feels like care in a cup. Poached chicken in a gingery, lime-bright broth, finished with cubes of avocado that go silky in the heat. Simple, warming, and deeply nourishing.
The broth base carries gelatin and minerals that support the gut lining, the chicken adds lean protein, and the avocado brings monounsaturated fat and fiber that make the bowl satisfying. Lime adds vitamin C, and ginger brings a gentle warmth long used to settle the stomach.
Ladle it hot and add the avocado last so it holds its shape. Take a breath over the steam before the first spoonful.
Ingredients
- 4 cups chicken broth
- 1 pound chicken breast, chopped
- 1 small onion (omit if you are managing interstitial cystitis)
- 4 garlic cloves
- 1 tablespoon lime juice (omit for interstitial cystitis)
- 1/2 tablespoon ground ginger
- 1/4 teaspoon sea salt
- 2 small avocados, cubed
- 1/4 cup cilantro
Omit black pepper, which the source flags as off-limits on strict AIP. No swap is needed - the ginger, garlic, and lime carry the flavor.
Method
- Bring the broth to a gentle simmer. Add the chicken, onion, garlic, lime juice, ground ginger, and sea salt. Let it cook until the chicken is cooked through, about 20 minutes.
- Just before serving, stir in the cubed avocado and the cilantro so they stay fresh and bright. Serve hot.
Instant Pot variation
Set the Instant Pot to saute and bring the broth to a simmer, or pressure cook the broth, chicken, onion, garlic, lime juice, ginger, and salt on high for about 8 minutes, then quick-release. Stir in the avocado and cilantro right before serving. (verify - untested conversion)
