Raspberry Sorbet

A frozen dessert that tastes exactly like what it is: whole raspberries and apples, blended and churned into something bright, cold, and genuinely sweet, with nothing added and nothing hidden.
The sweetness here comes entirely from the fruit. Raspberries are a source of anthocyanins, the polyphenols that give them their deep color, studied for their antioxidant activity, and they also carry vitamin C, which supports normal immune function. Raspberries run lower in sugar than most fruit, and the apples lend natural sweetness and body so nothing else needs to be added.
Blend it, churn it, and scoop it into a small bowl. Eat it slowly while it is still soft. Whole fruit, turned into something lovely, with nothing hidden in it, is its own kind of pleasure.
Ingredients
- 4 apples, peeled and sliced
- 4 cups raspberries
- 1/8 cup orange juice
No sweetener is added. All of the sweetness comes from the apples and raspberries themselves.
Method
- Put the apples, raspberries, and orange juice in a food processor and blend until completely smooth.
- Pour the puree into an ice cream maker and churn according to your machine's directions.
- Serve right away for a soft sorbet, or freeze briefly for a firmer scoop.
