A bright frozen pop, sweetened by berries

On a hot day, a cold treat that is entirely real food is its own small relief. These pops are mostly raspberry and coconut water with a little honey, blended and frozen, so the fruit does the sweetening and there is no refined sugar anywhere in them. Simple, clean, and genuinely satisfying.

Raspberries are a source of vitamin C and bring fiber and polyphenols, the colorful plant compounds that feed a healthier gut community. The coconut water carries electrolytes, so these gently support hydration on a warm day, which matters more than people think during a healing stretch.

Blend, pour, and freeze ahead so they are waiting when you want one. When you pull a pop from the freezer, take a second with the color of it before you eat. Even a popsicle can be met with a little care and gratitude for the fruit that made it.

Ingredients

  • 1/2 cup mint, finely chopped
  • 2 cups raspberries
  • 2 tablespoons honey
  • 1 tablespoon lime juice (omit for interstitial cystitis)
  • 1 1/2 cups coconut water

Method

Add the mint, raspberries, honey, lime juice, and coconut water to a blender and blend until smooth.

Pour the mixture into ice pop molds and freeze until fully set, at least 3 hours and ideally overnight. To loosen a pop, run the mold briefly under warm water.

Coconut water can be swapped for fruit juice or plain water if you prefer.
