Lemon basil granita, a bright frozen treat

A cold, bright dessert built from real ingredients is a genuine pleasure, and this one asks for only 4 ingredients, no cooking, and a modest touch of honey as the only sweetener. The freezer does almost all the work while you go on with your day.
Lemon juice is a source of vitamin C, which supports collagen formation and the everyday work of the immune system. The basil brings a green, slightly peppery note that keeps this from tasting like plain frozen lemonade. If you are watching histamine, citrus can be a trigger for some people, so check it against your own list.
Scrape it into icy flakes and eat it slowly from a small bowl. A cold, bright, honest dessert like this one is a real, simple gift to give yourself.
Ingredients
- 3/4 cup lemon juice
- 2 tablespoons honey
- 1 1/2 cups water
- 1/4 cup chopped fresh basil
Method
Put all four ingredients in a blender and blend until smooth.
Pour the mixture into a 9x13 baking dish, cover it, and freeze for at least 6 hours.
When you are ready to serve, drag a fork across the surface to scrape the granita into light, icy flakes. Spoon into bowls.
