Pizza soup: the flavor of pizza night with no nightshade in the bowl

Pizza is one of the harder things to let go of on AIP, not because of the crust, but because of the whole feeling of it: the warmth, the salt, the herbs, the it-is-Friday-and-we-are-relaxing of it. This soup goes after that feeling rather than the crust. A beet-and-carrot nomato base gives the deep, savory red, the herbs do the rest, and clean sausage and pepperoni carry the comfort. Months into moving an autoimmune condition toward remission, having a dinner that scratches the pizza itch without the nightshade is the kind of small win that keeps the long work feeling livable.
The bowl earns its keep nutritionally too. The zucchini that thickens the base is a source of vitamin C and potassium, and the broth, if it is a real bone broth, brings glycine and collagen, the raw materials the gut lining uses to mend, which is part of settling an immune system that has been running hot. The nomato base itself leans on beets and carrots for color the way a sauce would lean on tomato.
This dish asks you to read labels on the cured meats, which is its own kind of care, both for your healing and for the animal those meats came from. Source them well, make the bowl look good with the pepperoni and olives across the top, and take a breath before the first spoonful.
Ingredients
- 1 tablespoon coconut oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1 1/2 pounds zucchini, chopped
- 1 cup nomato sauce (the ARM beet-and-carrot nomato sauce)
- 2 cups chicken or bone broth
- 8 ounces mushrooms, sliced (omit for a low-histamine version)
- 1 pound crumbled sausage (clean-label, AIP-compliant)
- 4 ounces pepperoni (clean-label, AIP-compliant)
- 2 ounces black olives
- Fine sea salt, to taste
A note on swaps: this recipe already uses a nomato base in place of tomato, so the nightshade red is handled. The black pepper in the original is omitted. The real work here is on the cured meats: the sausage and pepperoni must be clean-label and AIP-compliant, with no nightshade spices such as paprika or chili, no seed spices such as fennel (very common in both), no added sugar, and no dairy. Most supermarket pepperoni and Italian sausage will not pass, so read carefully or use a trusted AIP source. The mushrooms and cured meats can be high in histamine, so this one is flagged low_histamine: no, and a low-histamine cook can simply leave the mushrooms out.
Method
Warm the coconut oil in a large pot over medium heat. Add the onion, garlic, and thyme and cook until the onion is translucent.
Add the zucchini and nomato sauce, bring to a boil, then lower the heat and simmer about 20 minutes, until the zucchini is very soft.
Blend the contents smooth, with an immersion blender right in the pot or carefully in a countertop blender, then return it to the pot if needed.
Stir in the broth, the crumbled sausage, and the mushrooms. Simmer 10 to 15 minutes, until the sausage is cooked through and the mushrooms are tender.
Taste and adjust the salt. Ladle into bowls and top each with pepperoni and olives.
Instant Pot variation
Set the pot to Saute and soften the onion, garlic, and thyme in the coconut oil. Add the zucchini and nomato sauce, press Cancel, lock the lid, and pressure cook on high for about 5 minutes, then quick-release. Blend smooth with an immersion blender right in the pot. Switch back to Saute, add the broth, sausage, and mushrooms, and simmer until the sausage is cooked through. Top with pepperoni and olives. This pressure time is an ARM-derived conversion and is flagged for kitchen testing.
