AIP Thai-style iced fruit salad - fruit over shaved ice with a coconut milk and honey drizzle

The craving that hits mid-afternoon on a hot day is real, and it doesn't care that you're in the middle of an elimination phase. What you need in that moment is something cold and sweet you can make in 5 minutes without touching a stove, so the craving doesn't win by default. This is that answer: fruit over shaved ice with a coconut milk and honey drizzle.
The color in blueberries and mango comes from polyphenols, plant compounds tied to easing inflammation in the body, alongside the vitamin C in both fruits. None of that makes this medicine, it just means the sweet thing you reached for is doing something quietly useful while it satisfies you. The coconut milk and honey drizzle is there purely for pleasure, and that's allowed too.
Any fruit you have on hand works here, so this doesn't need to wait for a grocery trip. 5 minutes, one bowl, and you're back to whatever the day still needs from you.
Ingredients
- 2 cups shaved ice
- 1 cup blueberries
- 1 large mango, diced
- 6 tablespoons coconut milk
- 1/8 cup honey
Method
Divide the shaved ice among four serving dishes and top each with the blueberries and diced mango.
Stir the coconut milk and honey together until smooth.
Drizzle a quarter of the coconut-honey sauce over each dish and serve right away, before the ice melts.
Any fruit combination works here, and you can adjust the honey and the amount of sauce to taste.
This is a no-cook assembly dessert, so it needs no air fryer or Instant Pot variation.
